A meatless offering from the folks @HelloFresh that makes a delicious dinner for two. Mushrooms are the star of this dish, but after beginning to sauté the button mushroom that came with the meal kit, I grabbed a package of cremini mushrooms to add to the pan. This beefed up the flavor substantially. Browning the mushrooms releases the trapped water and builds a hearty umami flavor profile. The cavatappi is a great choice for this dish. If cooked al dente the pasta provides a pleasant bite and stands up well to the sauce. The ridges on the pasta grab the sauce and scallion and garlic bits so you get a mix of flavors. The garlic and scallions added a nice flavor to the dish, but a shallot would have been better in place of the scallions. The cream sauce is made with a combination of @LoveMyPhilly cream cheese, milk, and pasta water that are thickened with a roux. It coats the pasta well, but you must reheat it very carefully or it will break. This Meal Kit was extremely easy to prepare took less than 30 minutes from start to sitting down to eat. Because I added the cremini mushrooms to this recipe the cost ended up being around $10.00 per person. Served along with a tossed salad and garlic bread this was very filling. I would recommend this @HelloFresh meal kit to anyone.
